Pooles Rock Semillon 2012

RRP: $50.00

The grapes for this wine were taken from our Cockfighters Ghost vineyard in the Broke sub-region of the Hunter Valley. The fruit was handpicked in late January, whole bunch pressed and cold settled. The clean juice was then racked and fermented at a cool temperature of 14—15°C for 15 days, the wine was then sulfured and racked off yeast lees, lightly fined with skim milk, filtered and bottled early to retain freshness.

Vintage Conditions

A very cool spring, followed by cold summer temperatures combined with above average rainfall, kept vineyard owners
busy leading up to and during the growing season. With
only 5 days recorded above 30 degrees through the summer
months, 2012 was almost cool-climate conditions, resulting in
white wines with lower alcohols and great natural acidity.
