This wine has been produced from Shiraz grapes from carefully identified vineyards in the premium cool climate Canberra District. The grapes were crushed and cold soaked for 6 days and then fermented in traditional 5 tonne open pots, fermenting for 7 days with plunging 3 times a day. The wine was pressed and put to 100% French oak to undergo maturation for 9 months. Blended, filtered and bottled.
2015 will be one of the great vintages of the Canberra Wine District. The season started cool and dry, with good rains in December and then a cool wet January. It finished with a dry, warm February and March. Harvest began early, and fruit quality is considered very high.
