Our flagship Semillon, this wine is handpicked from our very best old vines located on the Western Ridge of the historic vineyard that we simply call ‘The Ridge’. The grapes were handpicked in the last week of January, whole bunch pressed to minimise phenolics and cold settled for 2 days. Clean juice was racked and fermented cool for 15 days to retain varietal characters. The wine was then lightly fined with skim milk, filtered and bottled early to retain freshness.

“Made from the best fruit from old vines on the western ridge of The Ridge vineyard. It’s an eye-catching quartz-like green-gold colour in the glass, and you could say that sets the scene for the wine itself. Aromas and flavours are mostly in the lemon and green apple spectrum with an underlying minerally quality, and the slatey acidity pulls it long on the finish.” – Steven Cerber

The 2019 vintage will be regarded as a great Hunter Valley vintage. A dry winter was followed by good rainfall in spring and summer which set the vines up with healthy canopies. The ripening period was consistently warm and dry which resulted in yields that were slightly down but quality was very high. The white wines are full of flavour and will be highly sought after.
Enjoy now or over the next 20+ years.
