The Shiraz fruit was harvested in March 2015 and immediately transported to our winery in the Hunter Valley where it was crushed. Primary fermentation took place in 7 tonne stainless steel fermenters with pump overs taking place twice a day. At the end of fermentation it was gently pressed off to tank where Malolactic fermentation was allowed to finish. The wine was matured in French oak barriques and puncheons for 10 months before being filtered and bottled.
A very dry and warm growing season, with large rainfall in the first half of January that provided welcome relief for many vineyards. The rain, in conjunction with mild January temperatures, slowed down the rate of ripening, and vintage started just slightly earlier than normal. The warm and dry conditions continued through February, resulting in a very short and condensed vintage period. Varietal expression across all varieties is strong, showing a broad spectrum and depth of flavour. Natural acidity held up extremely well which also helped to preserve the condition of the juice.
Enjoy now or cellar for 6-8 years.
Aromas of mulberries and plums with a subtle spicy oak.
Rich flavours of ripe blackberries and hints of white pepper, combining with silky tannins to add structure and complexity.
