Handpicked in late February, from a small parcel of only our very best 40+ year old Shiraz vines, “The Lake” is named after the large spring-fed dam on the historic vineyard, adjacent to these vines. Once picked, these grapes were 1/3 whole bunch pressed, with the balance crushed/destemmed and chilled for cold soaking for 6 days. Fermented in 2 tonne open pots for 10 days and allowed to get hot to extract texture. Pressed and matured in 100% French oak for 16 months, select barrels blended, filtered and bottled.
The 2014 vintage is already regarded as one of the Hunter Valley’s great vintages. With ideal warm and very dry summer conditions, we had the luxury of determining exact picking times which allowed tannin and flavour profiles to fully mature. The 2014 white and red wines will be highly sought after gems, enjoy!
